if you count skills like faintheartedness, reckless haste and price of failure...those pretty much stop any melee in their tracks...

Plague touch is a good one.

For purely defensive skills, without hexing opponents or anything; I guess these would be some.

[skill=text]Dark Bond[/skill]
[skill=text]Aura of the Lich[/skill]

EDIT: Finally figured out how to use those skill tags.

Incidious Parasite
Shadow
Blood Renewal
Blood Ritual - more utility than a direct defensive skill
Offering Of Blood - more utility
Blood Is Power - more utility
Dark Bond
Demonic Flesh - increase health
Order Of The Vampire
Well Of Blood
Well Of Power
Plague Sending/Touch/Signet
Shadow Of Fear
Aura Of The Lich
Consume Corpse
Soul Feast
Infuse Condition
Taste Of Death
Taste Of Pain
Enfeebling Touch/Enfeelbing Blood/Enfeeble
Reckless Haste
Soul Bind
Wail Of Doom
Meakness
Signet Of Lost Souls

I've tried to list all the skills that do not harm enemies, but protect you.

If you consider removing abilities from others (like shouts, enchantments, etc.), then there are others as well that are good for defensive purposes.

Aura of the Lich is by far one of my favorite Necro elites. Combine that with a constant application/reapplication Blood Renewal and you almost have the effectiveness of a 55 build in 2 spells.

Dark Bond is also a very powerful defensive skill for a minion master.

Dark bond, aura of the lich, infuse condition. Throw in a dervish secondary for Mystic regeneration. Infuse condition ain't that great, but it does come in handy in condition-heavy areas and as an enchantment to power MR.

Necromancers have a lot of "offensive" defense skills, like spinal shivers, mark of subversion, life siphon, etc. Not much in the way of strict defense, but lots of punishment/debuff type stuff.
